Ahhhh! Summer is here and I haven't written a single blog during the month of June. No matter how quickly the days have gone I welcome the new season as it opens many opportunities for the kitchen. I made my favorite salad tonight using fresh spinach, sliced strawberries, diced celery and chopped green onion. Complemented with toasted pecans and honey poppyseed dressing, this is a refreshing summer salad. You can purchase the dressing in many grocery stores or go on line to find a recipe. Serve the salad as a side or add grilled chicken. Either way, you won't be disappointed.
