Looking for a simple, summertime treat? I remember eating chocolate covered frozen bananas as a child. The frozen banana resembled a smooth vanilla ice cream and the chocolate melted in my mouth. This treat is simple to make and provides a healthy option. And they are friendly to the gluten-free enthusiasts!
Frozen Bananas Pops
8 Medium Bananas
1 32-oz package chocolate chips
1/4 cup melted butter or canola oil
Optional toppings (chopped nuts, coconut, sprinkles or granola)
1. Peel bananas and place a skewer or popsicle stick in the base of each banana. Lay flat on a lined cookie sheet and freeze for several hours.
2. Melt the chocolate in a double boiler or in the microwave; add the butter or oil as the chocolate melts. Stir until well blended and smooth.
3. Dip each banana in the chocolate and place on the lined cookie sheet. If desired, after dipping you can roll the bananas in chopped nuts, coconut, sprinkles or granola.
4. Return to the freezer. Once chocolate is completely frozen, place the bananas in an airtight container and store in the freezer.
