  • Quinoa with Peas and Onion

  • Ingredients
    * 2 cups water
    * 1 cup quinoa, rinsed
    * 1 small onion, chopped
    * 1 tablespoon olive oil
    * 1-1/2 cups frozen peas
    * 1/2 teaspoon salt
    * 1/4 teaspoon pepper
    * 2 tablespoons chopped walnuts
    * In a large saucepan, bring water to a boil. Add quinoa. Reduce heat; cover and simmer for 12-15 minutes or until water is absorbed. Remove from the heat; fluff with a fork.
    * Meanwhile, in a small skillet, saute onion in oil until tender. Stir into cooked quinoa. Add the peas, salt and pepper; heat through. Sprinkle with walnuts. Yield: 6 servings.
