Add grapes for burst of flavor
Adding a handful of grapes immediately adds taste, color, freshness and a healthy enhancement to any dish. All three colors of grapes green, red and black are easy to use, extremely versatile, and conveniently available.

Salmon Tacos with Grape Pico de Gallo
n 1 cup red seedless grapes, chopped
n 1 cup green seedless grapes, chopped
n 1/4 cup finely chopped white onion
n 1/2 jalapeno pepper, seeded and diced
n Small pinch salt
n 1 pound salmon fillets
n As needed olive oil
n To taste pepper
n 12 small corn tortillas
n 2 limes
Prepare a grill for cooking over medium heat.
Put the grapes, onion, and jalapeno in a medium bowl. Season with salt and toss lightly. Cover and chill while you prepare the salmon.
Brush the salmon lightly with olive oil, then season with salt and pepper. Grill for 4 to 5 minutes on each side, or until its cooked to your liking. Remove the salmon and keep it warm. Heat the tortillas on the grill until warmed.
To serve, coarsely chop the salmon and divide it between the tortillas. Top each taco with grape pico de gallo and serve with lime wedges. Serves 4.
