Forget trying to get egg foo yong in China. It’s an all-American dish presented in Chinese restaurants here.

Foo yong is an egg pancake filled with chopped meats and vegetables and topped with a meat gravy. Seafood, bean sprouts and scallions are common.

The dish evolved from Chinese foo yung egg slices as American Chinese restaurants searched for new customers. It was a favorite in restaurants in the 1950s and 1960s.

In St. Louis, a St. Paul sandwich is an egg foo yong patty with mayo, lettuce, tomato and pickle on white bread. It is a popular lunch carry-out in Chinese restaurants there.
