Beginner's Box: Healthy omelet

In these days of the salmonella egg scare, you can still safely enjoy scrambled eggs in this recipe:

HEALTHY OMELET

1/2 tablespoon margarine

1 cup egg substitute such as Egg Beaters

1/3 cup shredded cheese

1 tablespoon green pepper, diced

1 tablespoon red pepper, diced

1 tablespoon onion, diced

1/4 cup mushrooms, sliced

Sauté vegetables in melted butter. Add egg substitute over medium heat. Allow to set in along the edges and add cheese. Fold the edges in with a spatula, allowing the uncooked portion to set. Cook until firm but still moist. Serves 2.
