Farley's Bar and Grill will have soft openings on the weekends, with a full opening scheduled for after Easter.
Farley's, located at 101 N. Main St., Lindsborg, will be open Friday, Saturday and Sunday. Kathy Farley, co-owner, said she and her husband, Bill Daggett, are in the process of training servers and kitchen staff to meet public demand.
“Our goal is to serve fresh food. That's why it takes a lot of preparation, and why we ran out last weekend,” she said. “Right now it's more than we can keep up with.”
Farley's currently offers a pub menu including nachos, wings, wraps, burgers and sliders and chicken-fried steak. It also offers specials, such as a friend chicken dinner available Sunday.
They hope to introduce a full menu in the future.
Farley's also has a full bar, including two red wines and two white wines on tap. It is one of six locations in Kansas with wine on tap.
It also employs a pastry chef to make bread pudding, cinnamon rolls, and a deep fried hot fudge brownie Farley said has been popular.
“With 'Jesus Christ Superstar' and all the other things this weekend, people want to get in, have a good meal and get out,” Farley said.
Farley's will be open from 11 a.m. to midnight Friday and Saturday, and 11 a.m. to 7 p.m. Sunday.
