“I’m looking forward to working with them and taking on the Cafe,” Everhart said. “It has a great reputation for Italian fine dining.”
Roy Applequist, the owner of the Renaissance Cafe, recently purchased The Swedish Crown, which is famous for its Scandinavian fare. Everhart will serve as the executive chef for both restaurants, as the Renaissance Cafe is only open Thursday through Saturday evenings.
“I’m excited to expand on a new concept,” Everhart said. “I’m excited to see how we can grow both businesses with the support of the Applequists.”
Italian fine dining may feel a little distant from small-town Kansas, but Everhart is glad to bring a local flair to the table.
“I’m using my local farmers and expanding on what I’ve done here at the Crown,” Everhart said. “We have a great crew there so we’ll keep what we’re doing.”

The Renaissance Cafe will have a grand reopening on the evening of Jan. 21 to celebrate the changes. The cafe is open from 5 to 9 p.m. Thursday through Saturday at 210 N. Center St. in Assaria.
